I'm not huge on onions, and the recipe originally called for 2. I used one, and it was still a bit much. I'll try 1/2 next time. But if you are a big onion lover, go for it. I also found that 2 cups of bread crumbs was way too much. I would only use 1 or 1.5 next time. I tasted the cashew ricotta after it was done and was disappointed in the flavor, but after I put it all together, it worked. If you don't want to go vegan, you could probably buy ricotta. But where's the fun in that?</span><br />
<br />
<span style="text-decoration: underline;">Ingredients<br />
</span>3/4 lbs uncooked ziti or penne pasta<br />
1 onion, sliced very thinly<br />
2 tbsp olive oil<br />
1 tbsp brown sugar<br />
1/4 tsp ground nutmeg<br />
white pepper and cayenne<br />
1 (15 oz) can pumpkin puree (not pumpkin pie mix)<br />
1/4 cup vegetable broth<br />
<br />
<span style="text-decoration: underline;">Sage Bread Crumbs</span>:<br />
2 cups bread crumbs, preferably fresh and homemade<br />
1/3 cup walnut pieced chopped in a food processor until resembling coarse crumbs<br />
1/4 cup Earth Balance (you can substitute olive oil, canola oil or a blend of these)<br />
2 tsp dried, rubbed sage<br />
1 tsp dried oregano leaves<br />
1/2 tsp ground paprika<br />
salt and freshly ground black pepper<br />
<br />
<span style="text-decoration: underline;">Cashew Ricotta</span>:<br />
1/2 cup raw cashew pieces (approx 4 oz)<br />
1/4 cup fresh lemon juice<br />
2 tbsp olive oil<br />
2 cloves fresh or roasted garlic<br />
1 lb firm tofu, drained and crumbled<br />
1 1/2 tsp dried basil<br />
1 1/2 tsp salt<br />

<b>Directions<br />
</b><span style="text-decoration: underline;">To make the Cashew Ricotta</span>: In a food processor, blend together the cashews, lemon juice, olive oil, and garlic until a thick creamy paste forms. Add the crumbled tofu to the food processor, working in two or more batches in necessary, until the moisture is thick and well blended. Blend in the basil and salt.<br />
Preheat the oven to 375 degrees F. Lightly grease a 9 x 11-inch lasagne type baking pan with olive oil, or use two smaller pans.<br />
<br />
Prepare the ziti according to the package directions, about 10 minutes. Drain, rinse with cold water and drain again. Set aside.<br />
<br />
<span style="text-decoration: underline;">While the pasta is cooking, make the caramelized onion</span>: preheat a large heavy-bottomed pan, preferably cast iron, over medium heat. Saute the onions in oil until some onion bits are very brown and caramelized, 12 to 15 minutes. Set aside.<br />
<br />
Place the Cashew Ricotta in a large bowl and fold in the pumpkin puree, brown sugar, nutmeg, white pepper, cayenne, and vegetable broth and mix. Add the cooked ziti and caramelized onions, stirring to coat the pasta. Pour the mixture into the prepared baking pan and press lightly with a rubber spatula to level it.<br />
<br />
<span style="text-decoration: underline;">Make the Sage Bread Crumbs</span>:<br />
Melt the Earth Balance in large, heavy-bottomed skillet over medium heat. Stir in the bread crumbs, walnuts, dried herbs and paprika, and season with salt and pepper. Stir constantly until the mixture is lightly coated, 3 to 4 minutes. Remove from the heat and sprinkle evenly over the ziti.<br />
<br />
Bake for 28 to 30 minutes, until the top of the ziti is golden brown. Cool for 10 minutes before slicing and serving. I know it has cream cheese AND cheddar cheese, but I only used half the package of cream cheese (it's all I had) and probably half the cheddar cheese. But most of us are lactose intolerant so it's a necessity AND it lessens the evils. So try it with half and see if you notice!<br />
<br />
(note that the ingredients are listed in TWO different areas - don't forget the bottom list when you shop!)<br />
<br />
First- make your green chile sauce:<br />
<b>Green Chile Sauce Recipe<br />
2 cups fresh or frozen roasted chiles, skinned, stemmed, seeded, chopped</b> (I used canned)<b><br />
5 cloves garlic, peeled and chopped<br />
2 vine ripe tomatoes, seeded, chopped<br />
3 cups vegetable broth- reserve 4-5 tablespoons<br />
Pinch of sea salt, to taste<br />
Fresh ground pepper, to taste<br />
A dash of golden balsamic vinegar<br />
1 tablespoon agave syrup<br />
2 tablespoons potato starch or sweet rice flour</b> (I used corn starch)<br />
<br />
In a large saucepan, combine the chiles, garlic, tomatoes, broth, sea salt and pepper, vinegar and agave syrup. Bring to a simmer over medium-high heat; reduce the heat a bit and maintain a gentle, constant low simmer for ten minutes.<br />
<br />
Add the potato starch to the reserved broth and whisk to make a thickening paste.<br />
Stir the paste into the green chile and continue to cook, stirring, for another 7 to 10 minutes, until the sauce is thickened but not gluey.<br />
<br />
As always, taste test. If you used very hot chiles and the sauce is too spicy, add more agave to soften the heat. Remove from the stove and set aside.<br />
<br />
Make your casserole:<br />
<b>2 1/2 cups green chile sauce (see above)<br />
10 to 12 corn tortillas<br />
1 8-oz. package soft cream cheese- room temperature </b>(I used half)<br />
<b>1 cup grated cheddar or Monterey Jack cheese, or vegan cheese </b>(I used half)<br />
<b>1 medium red onion, diced fine<br />
4 cloves of garlic, minced<br />
2 cups cooked black beans<br />
1/2 teaspoon cumin, to taste<br />
Juice from 1 large lime</b><br />
<br />
Preheat the oven to 350 degrees F. Lightly spray or oil an 8x8-inch baking dish.<br />
<br />
Spoon a half cup of the chile sauce into the baking dish to cover the bottom. Tearing some tortillas in half, if necessary- to fit- take four tortillas, one at a time, and dip each one quickly into the hot green chile sauce, then place it into the baking dish to make a bottom layer.<br />
Spread the softened cream cheese onto the tortilla layer; add the grated cheese.<br />
In a bowl, combine the onion, garlic and beans. Season with cumin and lime juice.<br />
Add the or bean mixture to the casserole and spread evenly.<br />
Spoon a half cup of green chile sauce over the beans.<br />
Follow with another layer of dipped tortillas. Press down with a spatula.<br />
Pour the remaining green chile sauce all over the top, allowing it to seep in around the edges.<br />
Cover loosely with foil and bake for 20 to 30 minutes until it is hot and bubbling. <br />
Allow the casserole to sit for a few minutes before cutting and serving. 3/4 c. bulgur wheat (or quinoa)<br />
1 1/4 c. water<br />
2 scallions (green onions)<br />
1 med. red or green pepper<br />
1 cucumber<br />
2 ears of corn<br />
2 med. tomatoes<br />
1 garlic clove, chopped<br />
1/2 c. chopped mint leaves<br />
2 tbsp. chopped fresh thyme<br />
1/4 c. lemon juice<br />
2 tbsp. olive oil<br />
2 tbsp. red wine vinegar<br />
<br />
Bring 1 1/4 cups water to a boil. Add bulgar wheat. Remove from heat. Let stand 30 minutes until water is absorbed. Steam corn for 5 minutes or until tender but still firm. Let cool, then scrape off the kernels. Chop scallions, pepper, cucumber and tomatoes. Add to wheat along with corn kernels. Whisk together olive oil, lemon juice and vinegar.<br />
<br />
Blend in garlic, mint and thyme. Add dressing to wheat and vegetable mixture. Stir to combine. Cover and refrigerate until ready to serve. 1 Red Pepper, chopped<br />
1 Medium Red Onion, diced<br />
4 cloves Garlic, minced<br />
2 teaspoons sea salt<br />
1 large Garnet Yam, cut into cubes (1/2 inch)<br />
Zest and juice of 1 lime<br />
1 28-oz can of Fire Roasted Crushed Tomatoes<br />
3 cans Black Beans (or 4 cups freshly cooked)<br />
1 c. water<br />
1 TBL. cumin<br />
1 TBL. Chili Powder (I use a Chili Blend)<br />
1 tsp. Cocoa Powder<br />
1 c. chopped Cilantro for garnish (optional)<br />

In large pot, heat oil over medium heat and sauté garlic, onion, red pepper & sea salt until soft (about 4-5 min). Add the cumin & chili powder and stir to combine. Cook for another minute. Add chopped sweet potato, water & lime zest & tomatoes, cooking about 10 minutes more, stirring occasionally. Add the black beans, lime juice and cocoa powder. Bring to a simmer, cover and cook for 10 minutes, or until potatoes are soft.<br />
<br />
Top with chopped cilantro and a squeeze of lime, if desired. A cross between a cookie and a mini-muffin, these bundles are a tasty, wholesome treat that are fast to prepare and can be enjoyed hot from the oven, or cooled to pack in lunches!<br />
<br />
1 cup quick oats<br />
1 cup ground oats (grind quick oa...ts in a processor until fine and crumbly)<br />
1⁄4 cup unrefined sugar (I used agave)<br />
1⁄4 tsp sea salt<br />
1⁄4 tsp cinnamon or ground cardamon<br />
1⁄4 tsp nutmeg<br />
1 tsp baking powder<br />
1 cup overripe banana, puréed (roughly 2 large bananas) (see note)<br />
1 tsp pure vanilla extract<br />
3 – 3 1⁄2 tbsp canola oil<br />
<br />
Preheat oven to 350°F (176°C). In a large bowl, combine the oats, ground oats, sugar, sea salt, cinnamon, and nutmeg, and sift in the baking powder. Stir through until well combined. In another bowl, combine the puréed banana, vanilla, and canola oil, stirring through. Add the wet mixture to the dry mixture, and stir through until just well combined. Drop large spoonfuls onto a baking sheet lined with parchment paper. Bake for 12-15 minutes, until lightly golden. Remove from oven and let cool on pan for 1 minute, then transfer to a cooling rack.<br />

1/2 rounded cup almonds, processed into a fine meal<br />
1/4 cup sorghum flour <em></em><br />
1/2 teaspoon fine sea salt<br />
1/4 teaspoon baking soda<br />
2 teaspoons vanilla extract (or 1 teaspoon vanilla plus 2 teaspoons peppermint extract for mint brownies)<br />
1/2 cup extra semi-sweet chocolate chips for the top<br />

Preheat the oven to 350 degrees F. Line an 8x8-inch square baking pan with foil and lightly oil the bottom.<br />
<br />
Using the microwave, melt the dark chocolate and butter in a large (microwave safe) measuring cup. Stir together to combine. Set aside.<br />
<br />
In a mixing bowl, beat the eggs on medium high till frothy. Add the brown sugar and beat until the mixture is smooth.<br />
<br />
Add the melted chocolate mixture into the egg-sugar mixture a little at a time - incorporate it slowly- and beat well for a good minute. The chocolate will look smooth and glossy.<br />
<br />
In a bowl, combine the dry ingredients: almond meal, rice flour, fine sea salt and baking soda; whisk together. Add the dry flour mix into the chocolate mixture and beat well for a minute. Add the vanilla, beat another half a minute or so.<br />
<br />
If you are adding nuts, stir in the nuts by hand and spread the batter into the prepared baking pan [this brownie batter is much thinner than any brownie mix batter I've tried- don't worry, it's going to be wonderful]. Shake the pan a little bit to even out the batter. Layer the semi-sweet chips all over the top of the batter and press them in slightly, if adding.<br />
<br />
Bake in the center of a preheated 350 degree F oven for 33 to 35 minutes, or until the brownies are set. Don't overcook. (Err on the side of gooey, if you must- that's what I do; I find gluten-free brownies taste better slightly undercooked and soft in the middle than over-cooked and crumbly.)<br />
<br />
Cool on a wire rack; and remove the brownies from the pan by gripping the foil edges. Chill before cutting.<br />
Makes 9-12 servings.<br />

Fill liners 2/3 full. Bake for 22-24 minutes. Transfer to a wire rack and cool completely before icing.<br />

1/2 tsp. cinnamon<br />
2 tbsp. margarine - melted<br />

Place sugar and cinnamon in a small bowl. Add the margarine, soy milk, and vanilla and stir with a fork until smooth. Keep at room temp. until ready to use. The mixture should look opaque and honey brown. · 1 Tbs. olive oil<br />
· 1 medium-size onion, chopped (about 1 cup)<br />

2. Meanwhile, make tacos: heat oil in large pot over medium heat. Add onion and sauté 5 to 7 minutes, or until soft. Add garlic, and cook 1 minute more, or until fragrant. Stir in beans, tomatoes, chili powder, cumin, hot sauce and 1 cup water. Season with salt and pepper. Reduce heat to medium low, and simmer 15 minutes, or until most of liquid has evaporated, stirring occasionally. Mash beans until filling is thickened, but chunky, and most beans remain intact. Adjust seasonings, if necessary. Transfer to serving bowl.<br />

As long as I profit from it, I guess. Tim added the onion, bell pepper, and spaghetti sauce so if you want something a little lighter, try it without those. It's good both ways!! Tim's changes are at the end. OH - and get sweet potato gnocchi - it's the best kind!! This serves around 4, if you're eating small portions. I'd double it so you have left overs.<br />

<b>Gnocchi with Zucchini Ribbons and Portabella Mushrooms</b><br />
<br />
one 17-ounce package prepared gnocchi<br />
2 cloves garlic, minced<br />
6 ounces portabella mushrooms, cut into cubes<br />
2 medium tomatoes, chopped<br />
1 teaspoon dried basil<br />
1/4 cup vegetable broth<br />
2 medium zucchini, sliced lengthwise into ribbons (I used a serrated vegetable peeler) or cubed<br />
<br />
salt and freshly ground pepper to taste<br />
<br />
Cook gnocchi according to package directions. Drain immediately and set aside.<br />
<br />
Lightly spray a large non-stick skillet with olive oil. Add the garlic, and mushrooms, and sauté over medium-high heat until mushrooms soften. Add the tomatoes and basil and cook for about 2 minutes. Add the broth and zucchini and cook until it is just tender (ribbons will be done in just a couple of minutes while cubes take longer). Add the gnocchi and salt and pepper to taste. <br />
<br />
<b>Tim's way:</b><br />

1/2 cup sweet onion cut into thin strips<br />
1/2 cup bell pepper cut into thin strips<br />

Equipment: A 13 by 18 inch rimmed baking sheet <br />
<br />
Ingredients:<br />
<br />
about 1 cup peeled yukon gold potato, cut into 1 inch chunks (I used red and it worked too)<br />
2 1/2 cups cool water<br />
4 1/2 cups (600 grams) bread flour<br />
2 1/2 teaspoons instant or other active dry yeast<br />
1 teaspoon sugar<br />
1 1/2 teaspoons table salt<br />
1/4 cup EVOO<br />

1. Put potatoes and the 2 1/2 cups water into a small saucepan, cover, bring to boil over high heat. Cook until potato chunks fall apart when pierced with a fork.<br />
<br />
2. Use a blender, immersion blender, or food mill to puree the potatoes with the 2 1/2 cups cooking water until smooth. Let mixture cool to 120 degrees F; it will feel very warm to the touch but not scalding.<br />
<br />
3. In a large bowl, stir together the flour, yeast, sugar, and half the salt. Add the potato puree and, using a wooden spoon or your hands, mix until you have a wet, sticky dough, about 30 seconds. Cover the bowl and let it sit at room temperature until the dough is tripled in size, 2 to 3 hours.<br />
<br />
4. Oil a 13 x 8 inch rimmed baking sheet (make sure you oil the sides as well or it will get stuck like mine!). Use a bowl scraper or spatula to scrape the dough onto the baking pan; it will still be quiet loose and sticky. Gently pull the dough and stretch it across the surface of the pan. Then oil your hands and press the dough evenly out to the edges. Drizzle with 3 tablespoons of the olive oil and sprinkle with the remaining salt. Use your fingertips to create dimples all over the surface of the dough. Let the dough rise in a warm, draft free spot until it has risen just over the edges of the pan, 45 minutes to an hour.<br />
<br />
5. Half an hour before the end of the second rise, preheat the oven to 400 degrees F, with a rack in the center.<br />
<br />
6. Gently place the focaccia in the oven on the center rack (the risen dough is delicate; a bump going into the oven could collapse it) and bake for 30 to 45 minutes (mine took 30) until the top is evenly golden brown. Transfer the pan to a rack to cool, and give it at least a few minutes before slicing and serving warm or at room temperature. (if it gets stuck in the pan like mine did, I ran a knife around the edge and the bottom as far as I could, turned it over, and tried to twist it out like an icecube tray. It was messy but eventually worked without too much damage!!)<br />

These are YUMMY. Sydney's favorite part (aside from eating them) was squishing the butter into the flour mix. I cut them in half (with a sharp knife) after they cool because they are pretty big.<br />
<br />
6 tablespoon (3/4 stick) chilled unsalted butter, cut into 1/4" pieces<br />
1 cup all purpose flour<br />
1 cup whole grain flour<br />
1/3 cup sugar<br />
1 teaspoon baking powder<br />
1/2 teaspoon baking soda<br />
1/2 teaspoon salt<br />
3/4 cup chocolate chips (I used white chocolate swirled with milk chocolate)<br />
3/4 cup buttermilk (I used soy milk!)<br />
1 large egg yolk<br />
1 teaspoon pure vanilla extract<br />
1 tablespoon demerara sugar (I don't know what this is so I just use sugar)<br />
<br />
Directions:<br />
Preheat oven to 400F. Spray baking sheet and dust with flour, shaking off excess.<br />
<br />
In a large bowl, whisk together flours, sugar, baking powder, baking soda, and salt. Add butter: rub in with fingertips until mixture resembles coarse meal. Mix in chocolate chips.<br />
<br />
In a medium bowl, mix milk, egg yolk, and vanilla. Whisk to combine. Add milk mixture to dry ingredients. Stir until combines (dough will be sticky). Using floured hands, turn out dough onto a floured work surface, form inot a 7 to 8 inch round, and cut into 8 wedges. Use a small spatula or the side of your knife to transer wedges to prepared baking sheet, spacing 1 inch apart (it's ok if wedges are mishapen).<br />
<br />
Brush scones lightly with milk and sprinkle with sugar. Bake until scones are golden and tester inserted into center comes out clean, about 20 minutes. I've worked out almost every day for almost 2 months now! I've been watching those P90X infomercial for months thinking how much I wanted to be that fit. And a few months ago, when the dog bit Sam, I picked Sam up in a panic and my tweaked my lower back AGAIN. I realized that I've been throwing my back out way too much lately and that I HAD to do something about it before I really hurt myself. So I ordered it. And it works! I've lost 5 lbs. and gained a lot of muscle and I still have one more phase before I complete the first round. I feel great! And I enjoy it. Mostly. The best part is that you burn so many calories doing the workouts that you don't need to restrict your calories. You actually need to increase your calories to fuel your body! I am supposed to eat about 2200 calories to maintain! 2000 if I want to lose. Crazy! Highly recommended and two thumbs up!<br />

And I'm obsessed with Jamie Oliver's Food Revolution. Great show. I hope he continues and the country is inspired to make the change. I know Michelle Obama is also trying to make some changes so hopefully between the two of them they can make a difference. Fast food does NOT belong in our schools. French fries aren't a veggie. Sydney went to "Uniquely Me" again this year for her Girl Scouts Troop. It's a fun day for the girls where they have different booths and information to support self esteem in girls. She did the fashion show again - this time in her own outfit. She did awesome! <br />

Sam started preschool in February. She did so well - not a tear or plea for me to stay. "Bye Mommy!" She didn't even look back. I was amazed since she had such a horrible week before. Between vaccinations, a cold, and the dog bite (more on that later), I was prepared for the worst. But she was ready. So was I actually. It wasn't as hard as I expected. I was very proud of my big girl. Preschool was short lived though - her last day is next Friday. Sydney is off in May and Sam starts kindergarten in July so we're taking the rest of the summer off for the last bit of mommy time. Here is Sam's first day of preschool. You can see how pale she is (from the cold) and the dog bite and bruising. She was such a trooper. This picture makes me want to cry.<br />

So the dog bite. Well Sam loves our dog. Our dog loves Sam. But Sam has no fear of said dog (even AFTER the bite!!). We've been trying to tell her to back off and love her a little more gently, and from afar, but she just can't help herself. So I was sitting on the couch, Hannah was sleeping on the floor, and Sam walked up and lay her head on Hannah's belly. It must have startled Hannah from her sleep, because I hear a growl and looked up to see Sam on the floor with Hannah on top of her. Those 2 seconds it took me to get from the couch to the floor were the worst ever. So she bit Sam on the face, inches from her eye and left a few bruises and tooth marks. I grabbed Sam and ran down the street to urgent care in a panic. She was fine and not in need of stitches. Very lucky little girl. Lucky dog too because my first instinct was to put her down. But she's never done this before and I have myself to blame for not teaching Sam how to handle her pets. We're working on the rules and Hannah doesn't spend as much time inside as she used to. Poor thing was getting used to being spoiled too.<br />

I don't think I went through this last year but I can't seem to get out from it this year. Maybe there was more sun? Maybe Sam was easier? She is going through a rough phase. Actually, both of them are. Syd is on break - it's been almost six weeks. YES, that's SIX weeks. We are going craaaaazy right about now. The countdown is on though. Syd goes back to school on Monday and Sam starts preschool on Wednesday!!! We are all very excited about that. Let me tell you. Syd and Sam are at each other for a good chunk of the day. And I'm running out of steam. One more week. That's my mantra.<br />

Enough of the negative.....I'm lacking inspiration right now so it's time for random thoughts...<br />

At this moment in time they are giggling and roaring at Hannah as she does laps around the table. She can keep this up for a good 5 minutes. I should see if the girls can go that long. Maybe I can get a nap out of them. Probably not. It's a good thought though.<br />
<br />
I gave Sam a pair of my heels for dress-up and I am amazed at her talent for walking, running, and jumping in them. She doesn't get it from me. She wears those things around for hours sometimes. I keep telling her that suffering for style is NOT necessary yet but she doesn't seem to care. <br />
<br />
I took Sam down for her vax and flu shots last week. She was so brave. She rarely cries at her vax appointments so I wasn't worried. The sweet nurse came in hiding the needles behind her back to prep when she realized we hadn't seen the doc yet, so she snuck back out with them still hidden. After the well exam, a new nurse came in (this time a young guy) with all 4 needles, which he proceeded to put down right next to her in plain sight. And took his time giving her a shot, taking forever and a day to plunge the liquid in, and another forever and a day to take the band-aid out of the wrapping, put it on, only to start over again. 4 times. She was hysterical by the end. I know how much it hurt. He sucked. When he finished, I looked over at Sydney and she had her face hidden in her hands crying for Sam. I spoiled them rotten with candy and toys from Raleys. Sigh. <br />
<br />
So the next day was Sydney's turn - only two shots for her. But after watching Sam's experience the day before, she was nervous. So was I. This time, we drew an ace though and got the sweet girl from the day before. She was teaching two other girls how to do it so I had a good feeling. One, two, three and she was done. Quick and painless. We were all very impressed. I realize that I now have bad karma for thinking horrible thoughts about the nurse from the day before. But he did suck. <br />
<br />
So since we were in shot mode, I went next door to the pharmacy and got my H1N1 vax. OMG it hurt!! But there were 2 small children and a gaggle of elderly watching so I toughed it out. And then proceeded to whine about how much my arm hurt for 2 days. I feel bad for rolling my eyes behind the girls back for complaining about their sore arms. They had 2 and 4 shots. I'm such a baby. Next stop, eye doctor. Wish me luck.<br />

Yuck. My OCD is NOT wearing off on them. I finally just gave in and brought out the vanilla syrup to make snow cones. YUM. Not that I had any. I'll save mine for when I'm in an actual snow cone store. :-)<br />

It definitely makes it feel like Christmas. I find it magical every time I see flurries. And that little hill combined with that little sled - makes me go wheee just as loud as the girls do! Who cares if I split it in two? :-) It's worth the $15!<br />
<br />
Oh, and we made a fort! Now THAT brought back childhood memories. Although, I don't recall it being such hard work. My age is showing. We all had a blast though. And it seems to be lasting a bit longer than our snow girl (named Jill, by the way). She's wasting away. Apparently she hasn't been eating as well as I have.<br />

We tried to trick or treat at a local outdoor mall but they ran out of candy before we got there. So we went trick or treating thought the neighborhood with Rebecca and her girls. Fun was had by all. Our bags were filled with chocolate and goodies. OK - "their" bags were filled but they love to share. Sydney was Hannah Montana (of course) and Sam was a scaaaary vampire. She even kept the wig on 95% of the night! Can't wait until next year!<br />

It was a wonderful and much needed break. We missed the girls tremendously though and were very happy to return home. Apparently - they missed us too. It's been two weeks and Sam still comes up to me numerous times a day and tells me she missed me - and can't get enough of me. Think they are laying on the guilt so we don't leave them behind next time? :-)<br />
